Sandia Smash Rum Cocktail Recipe

Sandia Smash Rum Cocktail

Glass: Rocks or Wine

In Shaker:
½ lime, squeezed
.5 oz agave
1 oz ginger syrup (recipe below)
3 oz watermelon, pureed
2.5 oz Platino

Shake and strain into glass. Add ice. Garnish with lime wheel.

Ginger Syrup

1.75 cups lemon juice
1.75 cups simple syrup
6 mint leaves
2 quarts chopped, unpeeled ginger (enough to fill a 40 oz. Vitamix or other durable blender.)

Blend until finely pureed. Strain through a fine strainer or cheesecloth bag. Refrigerate for up to 15 days.
